I would call the university and ask if they have any particular preference. Mind you, you need to balance that notion with the fact that you are going to be at a university. If it's in the US, dress comfortably but not sloppily. Jacket and tie is overkill unless you're a comparatively sharp dresser who doesn't feel overdressed like that. If you're asking, you'll be fine. I think it's possible that one would stand out in a slightly negative way when appearing at a math department in a suit and tie. There wouldn't be any real negative consequences, certainly, but it could absolutely make the social events with other admitted students a bit less comfortable. At best, I think most people would be left nonplussed. I suspect the most common reaction if you showed up to a math event in a suit and tie would be that everyone would assume you were lost.

Jim is pleased to say that mathematicians wear blue because, as he explains, gold and red uniformed crew were much more likely to be killed during the famous five-year mission than those in blue. Was Jim right about those blue-shirted mathematicians? Jim apparently said blue because blue is the colour worn by scientists and medics. Physics profs often have German accents, but this is not a distingushing characteristic.

Be wary of psychologists with fake Viennese accents which can sound similar to the unwary. Biology Professors: Sometimes wears a lab coat, though usually this is the sign of a biochemist. Marine biologists walk around in hip boots for no explainable reason, even in the middle of winter. They are apt to wear grey slacks and smell like fish, as opposed to most biologists, who smell strongly of formalin.

Microbiology instructors go around in spotless white coats, refuse to drink beer on tap, and wipe all their silverware before using it.

Never loan money to a bio prof, no matter how much he asks. You can tell by the gestures and accents. This is not a bad thing, though many of the American CS professors tend to pick up Indian accents which confounds more specific identification.
